El ingrediente estrella es la menta fresca, que le da la frescura extra a este rico sorbete.

Opcionalmente se puede agregar el colorante alimenticio o no, para obtener un tono verde de helado ya que si no será blanco (como se puede ver en las fotos de abajo).

Otros opcionales son: chispas de chocolate para hacer helado de menta granizado o baño de chocolate líquido para decorar la copa del sorbete, junto a unas cuantas hojas de menta fresca.

    Paso 1

    Poner a hervir la leche en una olla y agregar la mitad del azúcar en polvo. Mientras esperas corta las hojas de menta con unas tijeras.

    Paso 2

    Al hervir, retira la olla inmediatamente del fuego y añade las hojas de menta fresca que cortaste. Cubre la olla y déjala reposar 20 minutos. Esta etapa es muy importante, porque así obtendrás el sabor de la menta.

    Paso 3

    Mientras esperas puedes ir batiendo las 6 yemas en un bowl y agregar el resto del azúcar (60g.) Mezclar bien hasta blanquear. Puedes ayudarte con un batidor.

    Paso 4

    Agrega al bowl la leche con las hojas de menta, al estar ya tibia, se irá mezclando de forma más fácil. Revuelve bien hasta unificar.

    Paso 5

    Colar la mezcla con un colador fino y verter en una olla (puede ser la misma de antes, sólo lávala bien para reutilizarla).Éste paso es importante ya que eliminamos las hojas de menta (pero no su sabor) y así el helado será más cremoso y suave. Colocar la olla al fuego y revolver con espátula de silicona o cuchara de madera, para que no se adhiera, la mezcla, al fondo.

    Paso 6

    Debemos cocinar sin dejar de revolver hasta que la temperatura de la preparación llegue a 80° C o 176°F (si tienes un termómetro eléctrico es lo ideal, si no puedes usar el truco de sacar la cuchara o espátula y trazar con el dedo una línea, si ésta se forma limpiamente, entonces está a punto, y debes sacar la olla del fuego, si no debes seguir revolviendo hasta que ocurra)

    Paso 7

    En cuanto sacamos la olla del fuego agregamos la nata o crema de leche de una vez, ésto enfriará la mezcla y evitará que se siga cocinando. Mezclar bien y colocar la olla dentro de otra más grande con agua fría (también puedes usar el fregadero)

    Paso 8

    Cuando la preparación esté fría agregar las gotas del colorante verde y mezclar, se puede usar una Turbina para helados para mejorar la textura. o llevar al frezer por varias horas y luego servir.

    Puedes agregarle chispas o copos de chocolate o una salsa de chocolate.
